Infinite Monkey Theorem Urban Winery Good wines do not make themselves. They are the culmination of 1000's of hours of hard work and an infinite number of choices. Each choice affects final quality and is not taken lightly. Our winemaker likens himself to a chef who seeks out the best local ingredients; working in tandem with growers to fine-tune quality throughout the year.

Each varietal ripens at its own pace, is hand harvested at day break and makes the journey over the mountains to Denver where it is meticulously processed in small batches. Our aromatic white wines are fermented between 50-55f to preserve their delicate aromas. Our reds are fermented in  1ton fermenters then sealed for extended macerations from 28-42 days. Each red varietal is aged from 10-16 months in 60 gallon barriques that were hand selected by the winemaker from 12 different coopers who themselves sourced oak from 8 French forests and 1 US forest.
